Shroomy Tater Tuesday

This is not intended to be a gravy, but a flavorful mushroom topping for you taters. Fresh mushrooms will last about three days in mild to moderate temperatures. Plus, they don't weigh a whole lot.

If you are skilled at mushroom hunting, try this recipe with wild mushrooms! Morels in the spring and Chanterelles in the fall. Yum!


Shroomy Taters
Serves 1-2

1 cup roasted garlic instant mashed potatoes
8 ounces mushrooms, sliced
1 tablespoon mushroom (or brown) gravy mix
2-3 tablespoons olive oil

At home: package everything individually for the trail. Carry the oil in a leak proof container.

In camp: Bring 2 cups of water to a boil. Mix with potatoes, put in a cozy and set aside.  Return the pan to the heat and add oil. Saute the mushrooms until nice and tender, adding water to prevent sticking as needed. When the mushrooms are done, add just a bit more water and stir in the gravy mix. Stir WELL, scraping all the bits of mushroom and flavor from the bottom of the pan. Serve potatoes topped with the mushrooms.
