I like the flavor celery adds to dishes, so I decided to dry some to add to my backpacking meals. I bought a HUGE package (4 bunches) at Costco for pretty cheap.



Step 1. Cut off the leaves and root ends. Then you want to take a cloth and clean off any dirt from the celery. I use the leaves and root ends for soup stock, so those went into a zip lock bag that got placed in the freezer for later use.



Next, slice the celery. You want pieces that are about 1/4 inch thick. Pretty little green half-moons. Slice slice slice. Chop chop chop...



Spread the sliced celery on lined dehydrator trays. Try and get them in a single layer. Four bunches of celery (trimmed and cleaned) took up about 5 trays.  Set the dehydrator to 135 and let it run...



About 5 or 6 hours later, you have dried celery! Add to soup mix, rice pilaf or anything else you want a little more "flavor" in. Just remember, a tiny bit goes a LONG way...
