If you have a dehydrator, there is no reason not to dry your own vegetables at home. This time I dried some peas.

I took a 16 ounce bag of frozen peas, straight out of the freezer and dumped them onto a lined dehydrator tray. Break up any clumps of peas that are stuck together. No need to cook or thaw first. The dehydrator will do all of that for you.



I set the dehydrator on 135* and let it run. About an hour later, I shook the trays a little to make sure they were evenly distributed.  The peas were completely dry in about four hours. They look liked little green rocks, but they rehydrate just fine.



I store these, like the rest of my dried veggies and fruit, in a labeled, zip locking freezer bag.
