I took a 16 ounce jar of roasted red and yellow peppers, drained them and placed them on lined dehydrator trays in a single layer. Trader Joes has both roasted red peppers and a combination of red and yellow roasted peppers in jars for about $2/jar. I couldn't do peppers at home for that price! They are something that I always have in both my regular and backpacking pantry.
I set the dehydrator to about 140* and let it run... Half way through the drying time, I peeled the peppers from the trays and flipped them over to dry. This seems to help them dry faster and more evenly. A total of five hours later (from when I turned on the dehydrator) I had two trays of dried roasted red and yellow bell peppers.
They shrink down to nothing - Peppers are mostly water afterall. A little bit goes a LONG way though. These little bits of shriveled up peppers have a TON of flavor. Two 16 ounce jars is all I will need for an entire season of hiking and backpacking meals.
