I love my vegetables! I have started making my own dried mixed vegetable blends to put into soups and FBC style recipes. The "soup mix" that I can buy in the bulk bins often has way too much onion, so this is a great way to cut down on some of that. Plus I can sneak veggies into my hubby and he doesn't know it! 

I started with five beautiful zucchinis. I washed and dried them, then cut the ends off. Then I grated them on the coarse side of my cheese grater. 
I spread them on lined dehydrator trays. I have the tray liners, but you could use parchment paper. You want lined trays because the dried zucchini will fall through the cracks on the trays without them. Five zucchini filled three trays.
I set the dehydrator to 135* and let it run. I had other things in the dehydrator that day too (more veggies) but more on that later... About four and a half hours later the zucchini was dry. Crispy, with no wet spots.
I packaged most of the dried shreds into a zip locking plastic bag, but I added some to my dried vegetable mix as well. The shreds rehydrate into nothingness, so they are great for adding to soups and pilaf type dishes.
